Grown by smallholder farmers in the highlands of Yirgacheffe and dried on raised beds under the sun. The natural process gives it a soft, syrupy body while the altitude keeps the acidity crisp. Expect jasmine on the nose, a clean citrus lift, and a finish that settles into black tea.

1. 01Rinse the filter and warm the brewer, then discard the water.
2. 02Add 20g of coffee and level the bed.
3. 03Bloom with 50g of water for 40 seconds.
4. 04Pour in slow spirals to 200g, then to 320g.
5. 05Let it draw down and serve without stirring.
