A washed Huila that behaves beautifully everywhere — filter, espresso, or a mug at 7am. Fully washed and dried slowly, it lands in the sweet middle: caramel up front, toasted almond through the body, and a cocoa finish that lingers without turning bitter.

1. 01Dose 18g into a dry basket and distribute evenly.
2. 02Tamp level with steady pressure.
3. 03Start the shot and aim for 36g in 28 seconds.
4. 04If it runs fast, grind finer. If it chokes, coarsen.
